Pork Tamales

Pork Tamales ingredients
- 24 Corn husk
- 1 c Lard
- 2 c Masa harina
- 1⁄2 t Kosher salt
- 1 c Beef stock
- 1 c cooked pork
- 1 c Red chili sauce
- 1 lb Cheddar cheese
- 12 mild green chiles
Cooking Pork Tamales
1. Soak husks in hot water for 30 minutes, drain well.
2. Beat lard until fluffy.
3. Add masa, salt, and stock.
4. Beat until smooth and fluffy.
5. Divide into equal portions.
6. Pat husks dry. Place 1 piece of dough onto each husk and spread into a 4-inch square.
7. Top with 1 tablespoon shredded pork, 1 teaspoon chile sauce, 1 piece of cheese, and a chile half.
8. Rollup as for a jelly roll and secure with cotton twine steam for 60 minutes.
9. Serve hot, with additional chile sauce to the side.
