Pork Loin Roast with Hot Cherry Peppers

Pork Loin Roast with Hot Cherry Peppers ingredients
- 3 1⁄2 lb boneless pork loin roast, boneless
- 1 head caramelized garlic
- 1⁄4 c pork Spice Blend
- 2 T Cider vinegar
- 1 c chicken broth
- 1⁄2 c steak sauce
- 12 hot cherry or vinegar peppers; optional sweet can be used
- 1 c Raisins
Cooking Pork Loin Roast with Hot Cherry Peppers
1. Rub the pork loin with the garlic and pork spice blend and refrigerate overnight.
2. Preheat the grill or oven.
3. Place the pork loin on the grill and lightly brown on all sides (or place in a roasting pan and cook for 30 minutes until brown).
4. Lower the temperature and cook for 30 minutes, turning every 10 minutes on each side.
5. Preheat a medium saucepan on the grill or side burner.
6. Add the vinegar, chicken broth, steak sauce, peppers and raisins.
7. Heat to a boil, then lower the temperature to a simmer.
8. Place the pork loin in the pan, cover, and cook slowly for 1 hour, or until fully cooked.
9. The intenal temperature should be 160° when checked with an instant-read thermometer.
10. Remove the meat from the pan and allow to cool for 20 minutes.
11. Slice and serve with the juices.
