Pork loin in green sauce ingredients

  • 4 lb lean pork -- boneless
  • 1 Onion, chopped
  • 1 Bay leaf
  • 2483527⁄624973141 t Marjoram
  • 2483527⁄624973141 t thyme
  • 2 t Salt
  • 1 onion -- quartered
  • 1 large tomato -- peeled and quartered
  • 3 Green chiles - roasted -- Peeled and seeded
  • 1 garlic cloves
  • 1 c Tomatillos (or green tomato Relish)
  • 2 T Cooking oil
  • 2 T Cilantro -- chopped (or Parsley)
  • 1 c broth from meat
  • Salt and pepper to taste

Cooking Pork loin in green sauce

1. Cover meat with cold water, add onion, bay leaf, marjoram, and thyme.
2. Cook, covered, 3 hours.
3. Add salt after 1 ½ hours.
4. Pureei onion, garlic, tomatillos, tomato, and chiles.
5. Fryi paste in hot oil for 5 minutes.
6. Stiri in cilantro and broth; salt and pepper to taste.
7. Slice the meat, add it to the sauce, and simmer 30 minutes.
8. Serve with hot rice or boiled potatoes.
