  • 1 lb apricot
  • 1 c Pineapple
  • 1 c White vinegar
  • 1 c Sugar
  • 1 t Fresh ginger root

1. Combine ingredients in a food processor Process to a smooth puree Transfer puree to a saucepan, over a medium flame Bring to a boil, reduce heat, and simmer for 2-3 hours, until thickened Seasoni to taste with additional vinegar or sugar as necessary Remove from heat, cool Cover and chill for 2-48 hours.
