Peppered chicken stir-fry salad ingredients

  • -Fresh n Ready Italian

  • -or Teriyaki Seasoned
  • -Chicken Breast Fillets (2

  • 1⁄2 c Bottled oil and vinegar
  • -salad dressing
  • 2 Red, green, or yellow sweet
  • -peppers
  • 2 c Torn lettuce or mixed salad
  • -greens

Cooking Peppered chicken stir-fry salad

1. Remove skin from chicken breasts, if desired.
2. Cut breast fillets into l/2-inch-wide strips.
3. In a large skillet heat ¼ cup of the salad dressing.
4. Add chicken strips.
5. Stir-fryi over medium-high heat for 3 to 4 minutes or until chicken is tender and no pink remains.
6. Remove from heat.
7. Cool slightly.
8. Cut peppers into i l/2-inch strips.
9. In a medium mixing bowl combine peppers and undrained chicken.
10. Pour the remaining salad dressing over chicken mixture.
11. Tossi to coat.
12. Cover and chill several hours or overnight.
13. To serve, arrange lettuce on 2 dinner plates.
14. Drain chicken mixture.
15. Spoon over lettuce; toss lightly.
16. Makes 2 main-dish servings.
