Peasant Style Fish ingredients

  • 1 8 oz. halibut fillet, -- skinned
  • Salt and pepper
  • 3 T olive oil
  • 1⁄4 c Cooked lentils
  • 2 T sliced green olives
  • 1 T Chopped tomato
  • 1 T Chopped shallots
  • 1⁄2 T Balsamic vinegar
  • 1⁄4 c reduced beef stock
  • 1 T Chopped parsley, -- for garnish

Cooking Peasant Style Fish

1. Seasoni fish fillet with salt and pepper.
2. In a medium skillet heat 1 tablespoon oil until rippling.
3. Add fish, skinned-side up and sear for 3 minutes.
4. Add lentils, olives, tomatoes and shallots.
5. Using a spoon gently stir vegetables.
6. Turn fish and cook for 2 minutes.
7. Add vinegar and cook 30 seconds.
8. Add stock, bring to a boil and reduce liquids by half.
9. When fish is tender and cooked through, transfer it to a dinner plate.
10. Add remaining olive oil, stirring quickly to work it into sauce.
11. Taste and adjust seasonings.
12. Pour sauce over fish and garnish with parsley.
