Pear and Leek Soup

Pear and Leek Soup ingredients
- 100 g butter
- 2 Onion, chopped
- 6 Leeks, sliced
- 12 Pears (peeled ,cored & chopped)
- 2 l Vegetable stock
- 500 g Potatoes (peeled & cubed)
- 500 ml Dairy Cream
Cooking Pear and Leek Soup
1. Sweati the onion and leeks in butter till soft.
2. Add potatoes & pears, saute till golden.
3. Add stock and simmer till potatoes are soft.
4. Cool and puree in blender with cream.
5. Serve well-chilled or reheat.
6. Garnishi with deepfried strips of leek, a swirl of cream and freshly milled black pepper.
