Orzo and Pumpkin Soup with Sage

Orzo and Pumpkin Soup with Sage ingredients
- 1 c orzo
- 3 T butter
- 1 Onions
- 3 c fresh pumpkin
- 2 T Fresh sage
- 3⁄4 c smoked pork loin
- 6 c chicken broth
- Salt
- Freshly ground black pepper
- 2 T Fresh parsley
Cooking Orzo and Pumpkin Soup with Sage
1. Prepare pasta according to package directions, drain.
2. Heat the butter in a large saucepan over medium heat.
3. Add the onion to the butter.
4. Cover the pan and let the onion cook until softened and lightly browned, about 6 minutes.
5. Remove the cover and add the pumpkin, sage and pork loin.
6. Sautei until the pumpkin begins to soften and the sage is fragrant, about 5 minutes, stirring occasionally.
7. Add the chicken broth and orzo and bring the soup to a simmer.
8. Adjust the temperature to maintain a simmer and let the soup cook for 8 to 10 minutes.
9. Just before serving adjust the seasoning with salt and pepper and stir in the parsley.
10. Note: If fresh sage is unavailable, use 1 teaspoon dried.
