Oriental Salted-Fish Fried Rice

Oriental Salted-Fish Fried Rice ingredients
- 4 c cooked rice, cold
- 2 c small dried anchovies or salty fish flakes
- 16 T Cooking oil
- 4 T Chopped onion
- 4 c Diced cooked chicken breast
- 2 c Cooked, peeled prawns
- 8 Eggs, beaten
- 4 T Light soy sauce
- 1 t Sesame oil
- 4 T Chopped spring onions
Cooking Oriental Salted-Fish Fried Rice
1. Break up rice with fork and set aside.
2. With a little oil, fry dried fish until crisp.
3. Set aside and discard oil. In a wok or frying pan, heat cooking oil and fry the onions for about 20 seconds.
4. Add chicken and prawns and stir-fry for about 2 minutes.
5. Add beaten egg and stir fry until the egg is cooked.
6. Add rice and continue cooking using maximum heat.
7. Mixi well.
8. Add soy sauce and sesame oil. Cook for 20 seconds.
9. Add spring onions and cooked anchovies.
10. Mix well and serve.
