Orange Cake with Hot Rum Sauce

Orange Cake with Hot Rum Sauce ingredients
- -----CAKE-----
- 1 c butter, or margarine, softened
- 1 c Sugar
- 5 t Grated orange rind
- 2 Eggs
- 2 1⁄2 c flour
- 2 t baking powder
- 1 t Baking soda
- 1⁄2 t Salt
- 1 c buttermilk
- 1 c pecans, finely chopped
- Powdered sugar;
- -----HOT RUM SAUCE-----
- 1⁄2 c Sugar
- 1⁄4 c water
- 1⁄4 c Orange juice
- 3 T Lemon juice
- 2 T rum
Cooking Orange Cake with Hot Rum Sauce
1. Creami butter in a large bowl until fluffy, gradually adding the sugar.
2. Beat until light.
3. Stiri in rinds, add eggs one at a time beating after each.
4. Combine flour, baking powder, baking soda and salt.
5. Add alternately with buttermilk, beginning and ending with dry ingredients.
6. Beat well after each addition.
7. Foldi in nuts and pour in a greased and floured 9-inch tube pan. Bakei in a preheated 350oF oven for 50-60 minutes until test done.
8. Cool in pan on a rack for 10 minutes.
9. *** Hot Rumi Saucei *** Boil sugar and water for 1 minute, cool slightly, add remaining ingredients.
10. Carefully spoon over warm cake until all is absorbed.
11. Let cool and dust with powdered sugar.
12. Cover loosely to store.
