Orange Blossom Special Muffins ingredients
- From the Sneaky Kitchen:
- Cooking Spray
- 1 3⁄4 c self rising flour (see footnote)
- 1⁄8 t Baking soda
- 1⁄4 c Oat bran
- 1⁄4 c flax seed, ground
- 1 med Egg; lightly beaten
- Grated zest of 1 orange
- 3⁄4 c orange juice, preferably freshly squeezed with any fine pulp included
- 1⁄4 c orange blossom honey, or any other light honey
- 2 T oil, canola, corn or peanut preferred
- Orange marmalade
Cooking Orange Blossom Special Muffins
1. Preheat oven to 375 F. Line 12-muffin pan with paper liners and spray liners with the non-stick cooking spray.
2. Combine the flour, baking soda, bran and ground flaxseed.
3. In a separate bowl, lightly beat the egg. Add the orange zest, orange juice and oil. Combine the wet and dry ingredients lightly; the batter should still be lumpy.
4. Fill muffin cups about half full.
5. Drop a small dollop of orange marmalade in the center of each muffin.
6. Add the remaining batter, completely covering the marmalade.
7. If desired, decorate the top of each muffin with a small garnish of orange peel.
8. Bakei for approximately 18 minutes, or until tops are lightly brown and muffins are springy to the touch.
9. Serve with butter or margarine if desired, or more orange marmalade.
10. Note: If using all-purpose or cake flour, add 1 tablespoon of baking powder and 1/2 teaspoon of salt.
