Oatmeal Breakfast Bar ingredients
- 1⁄2 c -Shortening
- 1⁄2 c Dark brown sugar
- 3 large eggs
- 1 t vanilla extract
- 1 c Whole-wheat flour
- 1 t baking powder
- 1⁄2 t Salt
- 1 t Cinnamon
- 1⁄2 c Oatmeal
- 1⁄2 c Chopped walnuts
- 1⁄2 c Raisins (optional)
Cooking Oatmeal Breakfast Bar
1. Preheat oven to 350 deg. F. Mixi shortening and sugar in large bowl until creamy.
2. Add eggs and vanilla and beat until smooth.
3. Mix flour, salt, baking powder and cinnamon in a small bowl.
4. Stiri dry ingredients into the liquid mix. Stir in oatmeal, nuts and raisins.
5. Spread in 13 x 9 inch pan Bakei 350 deg. F for 15-20 minutes, until crust begins to brown.
6. DO NOT OVERBAKE.
7. Cool completely.
8. Invert on board and cut into 10-12 squares.
9. One square makes one breakfast serving.

I\'m 66 years old; raised five children, and fixed this type of \'bar\' way back when they were little and weren\'t always anxious to eat breakfast. Since they loved orange juice and oranges, I\'d get them to finish off one of these bars (sometimes two), and felt so \'secure\' knowing they were getting a balanced breakfast without realizing it.
They loved these bars so much, I could add a few chocolate chips, and sneak them by as \'dessert\' - again, they were highly content, and today they are healthy and slender...no weight problems. I kind of fell into this idea after making the \'crispy bars\' and deciding I could make them more healthy - it wasn\'t tough to switch the kids over to the oatmeal squares, and I see to this day, they\'re still considered something solid and nutritional. Oh yes, forgot to add that
Oh yes, forgot to add that now I include the dried cranberries and bits of dried apricots plus cashews - back in the 1960\'s they weren\'t in such easy and convenient supply. It really chunks up the bar, and makes it even more delicious! Adding dates keeps the \'fibre coming\', and it turns into a virtual \'meal\' that keeps you from being hungry - great for traveling.
