Native American Catfish

Native American Catfish ingredients
- 4 catfish fillet
- 1⁄4 c Pine nuts
- 2 T Pine nuts
- 1⁄2 c Yellow cornmeal
- 1⁄4 c All-purpose flour
- 1 t Salt
- 1⁄2 t Cayenne pepper
- 1⁄4 t Cumin
- 1⁄4 c Vegatable oil
Cooking Native American Catfish
1. Combine ground pine nuts with cornmeal, flour and seasonings.
2. Heat oil in a large heavy skillet over moderate heat.
3. Dredgei catfish fillets in cornmeal mixture and pan fry about 4 minutes per side until opaque.
4. Sprinkle with whole pine nuts.
