Nargisi Puri ingredients

  • 372529⁄-2009260032 c flour, all purpose; 175 g
  • 2 T Ghee or Oil
  • 2 t Salt
  • 2 Eggs;boiled,peeled & mashed
  • 2 med Potatoes; boiled,peeled &
  • -mashed
  • 1 T Mint, fresh; or fresh
  • -coriander(cilantro),finely
  • -chopped
  • 1 Green chili;seeded & chopped
  • -Warm water for kneading
  • Ghee; or oil for deep frying

Cooking Nargisi Puri

1. Kneadi together mashed eggs, potatoes, coriander, chili and 1 tsp salt and divide into 8 portions.
2. Sievei flour and 1 tsp salt.
3. Rub into 2 tbsp ghee or oil. Mixi well for 10 minutes.
4. Slowly add warm water.
5. Knead to a soft dough.
6. Divide the dough into 8 equal parts and shape into balls.
7. Roll each ball out a little.
8. Place one portion of egg micture in centre of each ball.
9. Foldi it over and pinch the ends.
10. Now roll out each into a round puri 4" (10 cm) diameter.
11. Do not make it too thin or the stuffing will come out. Heat oil in a frying pan, deep fry one at a time until the colour turns golden.
12. Serve hot with plain yogurt.
13. Cooking time: 25 minutes.
