Nancy's Stuffed Chicken Breasts

Nancy's Stuffed Chicken Breasts ingredients
- 4 boneless chicken breast halves
- 4 oz Soft Cheese (Goat or Ricotta)
- 1⁄4 c Chopped parsley
- Salt and ground black pepper
- 2 T olive oil
Cooking Nancy's Stuffed Chicken Breasts
1. 1. With a knife cut a 3-inch pocket along length of thickest side of chicken.
2. 2. In a mixing bowl combine the cheese and parsley.
3. 3. Stuff a quarter of this mixture into each pocket and secure pocket with toothpicks.
4. 4. Seasoni the outside with salt and pepper.
5. 5. Heat the olive oil in a non-stick pan and saute the chicken; 5to 6 minutes on each side.
6. 6. Remove toothpicks and serve with salad, corn and baked potato.
