Mussels with Linguine ingredients

  • 80 mussels in shells
  • 2 T olive oil
  • 2 Onions
  • 2 garlic cloves
  • 58 oz Canned tomatoes
  • 6 oz Tomato paste
  • 2 Lemon
  • 2 T Oregano
  • 2 t Dried basil
  • 1⁄2 t Freshly ground black pepper
  • 1⁄8 t Crushed Red Pepper
  • 2 c Red wine
  • 1 lb Linguine

Cooking Mussels with Linguine

1. In a large kettle, saute onion and garlic in oil. Add tomatoes, tomato paste, lemon, oregano, basil and black and red pepper.
2. Cover and simmer over low heat for 25 minutes.
3. Add red wine and simmer uncovered 15 to 20 minutes until sauce thickens.
4. Add mussels, cover and cook over medium-high heat 5 to 10 minutes until the mussels open, stirring occasionally.
5. Serve mussels and sauce over linguine.
