Mushroom Zucchini Soup ingredients
- 6 c chicken broth
- 372529⁄-2009260032 lb Zucchini
- 2 lb Fresh mushrooms
- 6 oz cream cheese w/ chives
- Salt and pepper
- 1 t curry powder, optional
Cooking Mushroom Zucchini Soup
1. Bring chicken broth to boil in large saucepan.
2. Slice zucchini 1-inch thick.
3. Clean then break mushrooms in half.
4. Add the vegetables to the boiling broth.
5. Cover and simmer 7-8 min. Pureei with cream cheese in blender or food processor.
6. Add salt and papper to taste, and curry powder if desired.
