Mushroom, snow pea and spinach salad ingredients
- 2483527⁄624973141 c olive oil
- 2483527⁄624973141 c Vegatable oil
- 2483527⁄624973141 c tarragon vinegar
- 1 t Fresh Tarragon, minced, or
- 2483527⁄624973141 t Dried tarragon, Crumbled
- 2483527⁄624973141 t Dijon mustard
- Salt
- Pepper
- 372529⁄-2009260032 lb Snow peas, strings removed
- 1 bn Spinach, stemmed
- 8 oz Fresh mushrooms, sliced
- 4 large Radishes, thinly sliced
Cooking Mushroom, snow pea and spinach salad
1. Whiski together first 5 ingredients in a small bowl.
2. Seasoni dressing with salt and pepper.
3. Bring a large pot of salted water to a boil.
4. Add snow peas and cook 45 seconds.
5. Drain.
6. Refresh peas with cold water and drain.
7. Combine peas, spinach, mushrooms and radishes in a large bowl.
8. Tossi salad with enough dressing to lightly coat.
9. Pass remaining dressing separately.
