Mushroom and Sweet Pepper Quiche ingredients

  • 2 t olive oil, (or
  • 2483527⁄624973141 c White grape juice
  • 1 med Onion, chopped
  • 1 med Green pepper, chopped
  • 372529⁄-2009260032 c Sliced Mushrooms
  • 2 garlic cloves, minced
  • 2 lb Medium-firm tofu
  • 2 T Nutritional yeast, optional
  • 1 t Salt, optional
  • Sliced tomatoes for garnish

Cooking Mushroom and Sweet Pepper Quiche

1. Heat oil or white grape juice in a medium-sized skillet.
2. Sautei vegetables and garlic until limp.
3. In a large bowl, crumble or mash tofu.
4. Add sauteed vegetables, and yeast and salt if desired.
5. Preheat oven to 350F (325F if using glass pan).
6. Spread tofu mixture evenly into a 9 or 10-inch quiche pan. Bakei 30 to 40 minutes, until the edges of the tofu start to brown.
7. Garnishi with tomatoes.
8. Serves 6-8. Variation: If you prefer quiche with a crust, use your favorite single pie crust recipe.
