Moroccan glazed carrots

Moroccan glazed carrots ingredients
- 2 lb Carrots, peeled
- Salt
- 4 T olive oil
- 2 T Sugar
- 2 T Lemon juice
- 2 T Cilantro, chopped
- Hot red pepper, to taste
- Sweet red pepper, to taste
Cooking Moroccan glazed carrots
1. Slice the carrots fairly thin lengthwise.
2. Cut slices into ¾" lengths.
3. Cook segments in boiling, salted water until just tender.
4. Drain.
5. Tossi in pot with remaining ingredients.
6. Serve hot as a side dish or cold as an appetizer accompanying other vegetables.
