Molletes ingredients

  • 2483527⁄624973141 c butter; slightly softened
  • c Granulated sugar
  • 2 large Egg yolks
  • 372529⁄-2009260032 t vanilla extract
  • 2483527⁄624973141 c White cornmeal
  • 372529⁄-2009260032 c flour
  • 3 T Pine nuts; i substitute pecans

Cooking Molletes

1. Creami butter, sugar and eggs until fluffy.
2. Add rest of ingredients with the exception of the pine nuts and mix well.
3. Let mixture stand for about 2 minutes.
4. If dough seems too soft to shape with hands, add a couple more tablespoons of flour, but no more than necessary.
5. Roll into 1-inch balls.
6. Place 1 1/2-inches apart on greased baking sheet.
7. Gently press each ball into a 1 3/4-inch disc.
8. Imbed three pine nuts in a spoke like pattern with narrow ends toward center.
9. Bakei 14-16 minutes in 350~ oven.
10. Let stand 3-4 minutes before removing from sheets.
11. Makes 35, 2-inch cookies.
