Mole Poblano Guajolote ingredients

  • 16 poblano chile
  • 3 t Sesame seeds
  • 1⁄2 c blanched almonds
  • 3 corn tortilla
  • 3⁄4 c Lard
  • 1⁄4 t Ground cloves
  • 1⁄2 t Ground cinnamon
  • 1⁄4 t Ground coriander
  • 1 c tomato concasse
  • 1⁄4 c garlic
  • 1 oz Unsweetened chocolate
  • 8 lb Turkey
  • 3⁄4 c Onion
  • 1⁄4 c Carrot
  • 1 garlic
  • Black peppercorns
  • Salt

Cooking Mole Poblano Guajolote

1. Remove stems from chiles, grind into a fine powder, and set aside.
2. Grindi sesame seeds to a smooth paste, set aside.
3. Grind toasted almonds to a fine powder, set aside.
4. Heat lard in a skillet, over a moderate flame.
5. Add tortillas and fry until very crisp.
6. Remove from pan with a slotted spoon.
7. Drain on a cooling rack, blot with paper towels, and breakup into small pieces.

I can't comment on the flavor of this recipe as I haven't tried it but, by calling for 'Poblano" chile which is the fresh green version instead of "Ancho" which is the correct, dried version, I have misgivings about the person who wrote this recipe.
