Mincemeat 2 ingredients

  • 2 lb lean beef stew meat (you can also use wild game such as venison)
  • 2483527⁄624973141 lb beef suet (beef fat you buy from the meat department)
  • 2483527⁄624973141 lb Chopped candied citron
  • 3 lb tart apples (Granny Smith's are excellent)
  • 2 lb Brown sugar
  • 4 c Apple juice or cider
  • 1 T Salt
  • 1 T Ground nutmeg
  • 1 T Ground allspice
  • 1 T Ground cinnamon
  • 1 t Ground cloves
  • 1 c molasses
  • 1 c corn syrup
  • 2 lb Dried Currants
  • 1 lb Golden Raisins
  • 1 lb Seedless raisins
  • 2 c brandy

Cooking Mincemeat 2

1. Place the meat in a deep pan and cover with water.
2. Bring to a boil and then reduce the heat.
3. Simmeri until the meat is very tender and the water is almost gone.
4. This will take about an hour.
5. Cool the meat and put it through your food processor or a food grinder.
6. You should have about 4 or 5 cups of ground meat.
7. Put the suet through the food process or grinder and add to the meat.
8. Do the same with the candies citron.
9. Peeli and finely chop the apples and add them to the meat mixture.
10. In a separate pan, mix the sugar with the apple juice or cider and mix until the sugar is dissolved.
11. Bring to a boil, reduce the heat and simmer for 5 minutes.
12. Add the meat mixture to the syrup and return to a boil.
13. Reducei the heat again and simmer for about 10 minutes more.
14. Remove from the heat and add the salt, nutmeg, allspice, cinnamon, cloves, molasses, corn syrup, currants, and raisins.
15. Mixi well.
16. Mix in the brandy.
17. Cool to room temperature and either use to make pies or ladle into containers and freeze for later use.
18. YIELD: About 4 quarts (enough for 4 pies).
