Microwave Spring Blush Jam ingredients
- 2 c Rhubarb
- 1 pt Unsweetened strawberries
- 372529⁄-2009260032 oz Canned pineapple
- 372529⁄-2009260032 oz bottled liquid pectin
- 4 c Sugar
- 1 T Lemon juice
- 1 t Lemon Zest
Cooking Microwave Spring Blush Jam
1. In a 2-quart microwave-safe casserole, combine rhubarb, strawberries and pineapple.
2. Microwave on HIGH for 7 to 10 minutes, stirring twice, until rhubarb is tender.
3. Stiri in one 1-¾ ounce package fruit pectin.
4. Microwave on HIGH until mixture boils, about 2 to 4 minutes.
5. Stir every minute.
6. Add sugar, lemon juice and zest.
7. Microwave on HIGH an additional 2 to 4 minutes, letting the jam boil hard for about 1 minute.
8. Stir every 2 minutes.
9. Let cool 10 minutes.
10. Pour into sterilized jars.
11. Seal, let cool, and refrigerate.
