Mexican corn relish

Mexican corn relish ingredients
- 1 Diced onion -- white
- 1 T Canola oil
- 2 c corn kernels
- 1 Red bell pepper -- diced
- 1⁄3 c Poblano -- diced
- 2 T Chopped cilantro
- 1 T Fresh lime juice
- 1⁄2 t Salt
Cooking Mexican corn relish
1. Sautei the onion in the oil, stirring occasionally.
2. Add corn and cook until tender, 3 to 5 minutes, then transfer to a medium-size bowl.
3. Add remaining ingredients.
4. Mixi well and serve at room temperature.
5. Pantry: substitute green bell pepper for poblano chili;; white wine vinegar for fresh lime juice.
