Mexican chicken salad ingredients
- 2 c Cooked Chicken, Cut Up
- 1⁄4 c Dairy Sour Cream
- 1⁄4 c Mayonnaise or salad dressing
- 1⁄4 c Carrot, finely chopped
- 2 T Cilantro, Fresh, FinelySnipped
- 2 T capers
- 2 T Pimentos, Canned, Chopped
- 2 T Lime Juice
- 1⁄2 t Cumin, ground
- 1⁄2 t oregano leaves, dried
- 1⁄4 c Onion, Chopped, 1 small
- 1 Lettuce leaves
- 1 Avocado, *
- 1 Paprika
Cooking Mexican chicken salad
1. * avocado should be peeled and cut into wedges.
2. Tossi all ingredients except lettuce, avocado and paprika.
3. Serve on lettuce with avocado; sprinkle with paprika.
