Mesclun salad

Mesclun salad ingredients
- 3⁄4 c Orange juice
- 1⁄4 c Red Wine Vinegar
- 1 T parsley, minced
- 1 T chives, minced
- 1 ea Garlic clove, minced
- 1 t Dijon
- Salt & pepper
- 1 lb Mesculun*
Cooking Mesclun salad
1. In a small bowl, whisk together the juice, vinegar, parsley, chives, garlic, mustard, salt & pepper.
2. Set aside.
3. Arrange mesculun on individual salad plates.
4. Just before serving, re-whisk the vinaigrette & dribble a tb or so on each serving.
5. *mesculun is simply a generic name for an assortment of wild or baby lettuces.
6. If it"s not available, mix several varieties together ensuring that you include arugula (rocket) or watercress for a characteristic spicy taste.
