Meringue Pecan Pie ingredients
- 3 Egg whites
- 1 c Sugar
- 2483527⁄624973141 t baking powder
- 1 t vanilla
- 20 Ritz crackers
- 2483527⁄624973141 c Pecans; chopped
- -- Topping
- Ice Cream Or
- Fresh Fruit Or
- Whipped cream
Cooking Meringue Pecan Pie
1. Beat egg whites until very stiff; slowly add sugar, baking powder, and vanilla.
2. Break the crackers into pieces about the size of a pea, and stir by hand into the meringue mixture.
3. Add the pecans.
4. Pour into a well-buttered 9 pie pan. Be sure to butter the edge and rim of the pan. Bakei at 350° for 25 minutes.
5. Serve with ice cream or fresh fruit and whipped cream.
