Mediterranean White Bean Soup

- 2 c White beans note)
- 7 c water
- 1 Onion, chopped
- 6 To 7 cloves minced garlic
- 2 Potatoes, peeled and
- -chopped
- 8 oz Can water-packed artichokes
- Drained
- 4 oz Can sliced
- -black olives, drained
- 8 oz Can tomato sauce
- 1 t Italian herb mix
Cooking Mediterranean White Bean Soup
1. Place the beans in a large pot with the water.
2. cover and cook over medium heat for 1 hour.
3. Add the onion and garlic and continue to cook until the beans are tender, 1 to 1 1/2 hours.
4. add the potatoes and cook another 20 min. Add the remaining ingredients and cook for about 10 more min. Note: if you soak the beans overnight, the total cooking time may be reduced by 30 min.
