Mediterranean Chili

Mediterranean Chili ingredients

  • 2 lb ground Beef Top Round
  • 1 lb Italian sausage
  • 2 c Shallot
  • 2 T garlic
  • 4 c Low sodium beef broth
  • 1 t saffron threads
  • 3 T olive oil
  • 12 oz Diced green chiles
  • 1 t Oregano
  • 1 t Cumin
  • 1⁄2 t Cayenne
  • 2 T Hot chili powder
  • 6 oz Tomato paste
  • 32 oz canned kidney beans
  • 4 c Onion

Cooking Mediterranean Chili

1. Combine beef, sausage, and garlic in a large stockpot.
2. Sautei for 10-15 minutes, until browned.
3. Add remaining ingredients, except beans.
4. Simmeri for 60 minutes.
5. Add kidney beans and simmer for another 30-60 minutes.
6. Serve hot, garnished as desired.
