Mediterranean Chili ingredients
- 2 lb ground round
- 1 lb Italian sausage -- ground
- 2 c Shallots, minced
- 2 T garlic, minced
- 4 c Low sodium beef broth
- 1 t saffron threads
- 3 T olive oil
- 12 oz diced green chilis
- 1 t Oregano
- 1 t Cumin
- 1⁄2 t Cayenne
- 2 T hot chile powder
- 6 oz Tomato paste
- 32 oz canned kidney beans -- drained
- 4 c Onion, minced
Cooking Mediterranean Chili
1. COMBINE BEEF, SAUSAGE, AND garlic IN A LARGE stockPOT SAUTE FOR 10-15 MINUTES, UNTIL BROWNED ADD REMAINING INGREDIENTS, EXCEPT BEANS SIMMER FOR 60 MINUTES ADD KIDNEY BEANS AND SIMMER FOR ANOTHER 30-60 MINUTES SERVE HOT, GARNISHED AS DESIRED.
