Meatless Moussaka

Meatless Moussaka ingredients
- 1 Large red onion
- 1 medium eggplant
- 2 Medium Zucchini
- 8 oz Firm tofu
- 1⁄4 c Fresh basil
- 2 T Fresh parsley
- 3 c Tomato sauce
- 1⁄2 t Hot pepper sauce
- 2 T Grated Parmesan cheese
Cooking Meatless Moussaka
1. Layer the onions, eggplant and zucchini in the bottom of an 11-by-7-inch baking dish.
2. Sprinkle the tofu over the vegetables.
3. Then top with the basil and parsley.
4. Stiri together the tomato sauce and hot-pepper sauce.
5. Pour over the tofu and vegetables.
6. Bakei at 350 °F for 30 to 40 minutes or until bubbly and the vegetables are tender.
7. Sprinkle with the cheese before serving.
