Mandeltorte (Almond Torte)

Mandeltorte (Almond Torte) ingredients
- 1 c Sugar
- 1⁄2 t Almond extract
- 6 Egg yolks
- 7 Egg whites
- 1 Lemon, Juice & Rind Only
- 1 t Cinnamon
- 1 c Unblanched Almonds, Ground
- 1⁄2 c Toasted Bread Crumbs
- Lemon Orange Custard Filling
- Confectioner's Sugar, Sifted
Cooking Mandeltorte (Almond Torte)
1. Preheat the oven to 350 degrees.
2. All ingredients must be at room temperature (70 degrees F) before starting.
3. Sifti the flour.
4. Beat the egg yolks.
5. Gradually add the sugar to the egg yolks.
6. Beat until creamy.
7. Add the lemon rind, lemon juice, cinnamon, ground almonds, bread crumbs and almond extract.
8. Whipi the egg whites until stiff but not dry. Foldi the egg whites lightly into the batter.
9. Pour the batter into 2 (8") ungreased layer cake pans.
10. Bakei about 20 minutes.
11. Cool. Carefully(!) remove from the pans.
12. Spread Lemoni Orangei Custardi filling between the layers.
13. Sprinkle sifted confectioner's sugar over the top.
