Maharagwe (Spiced Red Beans In Coconut Milk) ingredients

  • 1 c dried red kidney beans
  • 2 med Yellow Onion, chopped
  • 1 T Oil
  • 2 Tomatoes, chopped
  • 1 t Salt
  • 2 t Turmeric
  • 3 Chili peppers, ground
  • 2 c coconut milk

Cooking Maharagwe (Spiced Red Beans In Coconut Milk)

1. In a large pot, cover the beans with water & simmer until they are tender.
2. Sautei the onions in the oil until golden.
3. Add, with the remaining ingredients, to the pot & simmer for several minutes until the beans are very tender & the tomatoes are cooked.
4. Serve over rice or a stiff porridge.
