Lynn's Green Marsala

Lynn's Green Marsala ingredients
- 10 zucchini, shredded
- 3 potatoes, shredded
- 1 Onion, shredded
- 1 tomato, diced finely
- 1 green jalopeno, shredded
- 1 red jalopeno, shredded
- 1 red banana pepper, shredded
- 1 yellow banana pepper, shredded
- 1 pk spinach, thawed, chopped, squeezed
- 2 T balsamic
- 1 lime juiced
- 1 garlic gloves, minced (to taste)
- 1 ginger, minced (to taste)
- 1 cn v-8 juice, or tomato juice
- 1 t Coriander
- 1 t Turmeric
- 1⁄2 t cardomom
- 1⁄2 t Cinnamon
- 1 cilantro leaves (to taste)
Cooking Lynn's Green Marsala
1. Start with garlic and ginger, saute in some balsamic, add onion, add jalopeno and peppers.
2. Then add potato and zucchini, as it needs liquid add v-8 to consistency you like.
3. Add spinach.
4. Seasoni with above spices.
5. At the very end throw in the cilantro leaves.
6. Serve on top of basmati rice with wheat berries (use 2 c rice to 1 c wheat berries or bulgar wheat).
7. It is very hot and spicy and tastes wonderful.
