Low-Fat Red Beans And Rice (High Fiber) ingredients

  • 1 red kidney beans, 6 oz can
  • 1 c water
  • 1⁄2 c pumpkin
  • 1⁄4 c Tomato sauce
  • 3 T Chili sauce
  • 1⁄8 t Oregano
  • 1⁄8 t garlic, minced
  • 2 c rice, cooked, hot

Cooking Low-Fat Red Beans And Rice (High Fiber)

1. In large nonstick saucepan over high heat, combine all ingredients except rice.
2. Bring to boil, boil for 1 minute and reduce heat to low. Simmeri 30 minutes, adding water if needed.
3. Stiri occasionally.
4. Serve over rice.
5. Makes 4 servings.
6. Calories 157 Fat 1 g Fiber 6. 2 g.
