Lotus Rice

Lotus Rice ingredients
- 2 c Brown rice, short grained; uncooked
- 1⁄2 c Lotus seeds, dry
- 3 1⁄2 c water
- 1 c Almonds; sliced, roasted
Cooking Lotus Rice
1. wash rice and lotus seeds and place in a pressure cooker.
2. Add water and soak for 3 to 5 hours, until softened.
3. Add salt and secure lid. On medium-high heat, bring pressure up to 15 pounds.
4. Lower heat and place a flame deflector or heat diffuser beneath the pressure cooker.
5. Cook for 50 minutes.
6. Remove from heat and allow pressure to reduce.
7. Mixi in almonds and serve hot.
