Lnchee Kabin(Malaysian Spiced Fried Chicken) ingredients
- 1 1⁄2 kg chicken, preferably corn-fed
- Oil for deep-frying
- deep-fried prawn crackers for garnish
- Marinade
- 2 T curry powder
- 2 T Light soy sauce
- 4 T Lemon juice
- 2 t Salt
- 2 t Sugar
- Sauce-
- 1 t Keens mustard powder
- 125 ml worchestershire sause
- 2 red chillies -- finely sliced
Cooking Lnchee Kabin(Malaysian Spiced Fried Chicken)
1. Rinse and dry chicken, inside and out, with paper towels.
2. Using a hair drier at coolest setting, dry the outside of the chicken thoroughly.
3. Chopi chicken into small, casserole-size pieces.
4. Blend marinade ingredients in a large bowl.
5. Tossi chicken pieces in marinade, ensuring they are well coated.
6. Marinatei for 3 to 4 hours.
7. Make sauce by blending mustard with 1 tbsp of worcestershire sauce to a smooth paste, then stir in remaining worcestershire sauce and chillies.
8. Set aside.
9. Just before cooking, drain off marinade.
10. Deep-fry chicken in batches in very hot oil (190'C).
11. Drain on paper towels on a rack.
12. Once all the chicken is fried, place on a serving dish and garnish with prawn crackers.
13. Serve hot with accompanying sauce in a separate bowl.
