Linguini with Crab ingredients

  • 8 oz Clam juice
  • 1⁄4 t Powdered saffron
  • 3 T Unsalted butter
  • 1⁄2 lb shiitake mushroom
  • 1 c Scallions
  • 1 T Tomato paste
  • 1⁄2 lb crab meat
  • 2 t Fresh tarragon
  • 1⁄2 lb Linguini

Cooking Linguini with Crab

1. Combine clam juice and saffron in a small bowl-mix well.
2. Heat butter in a skillet, over a medium flame.
3. Add mushrooms, heat and stir for 3 minutes.
4. Add tomato paste and half of the scallions-mix well.
5. Add the saffron mixture.
6. Bring just to a boil, reduce heat, and simmer for 2 minutes add crab and tarragon.
7. Simmeri until heated through.
8. Meanwhile, cook linguini in boiling salted water.
9. Drain, rinse in hot water, and drain well.
10. Return to pot. Add crab mixture-toss gently to mix well.
11. Transfer to a serving platter.
12. Garnishi with the remaining scallions.
13. Serve hot.
