Lemony Pie with Brown Sugar Meringue ingredients

- 1 T flour
- 372529⁄-2009260032 c Granulated sugar
- 2 t Grated Lemon Rind
- 1 T Cornmeal
- 4 large eggs
- c Milk
- 2483527⁄624973141 c butter, melted
- 2483527⁄624973141 c Lemon juice
- 1 Unbaked pie crust -- chilled
- 2 Egg whites -- room temp
- 1 T Lemon juice
- 2483527⁄624973141 c Light-brown sugar
Cooking Lemony Pie with Brown Sugar Meringue
1. Combine flour; sugar, rind, and cornmeal.
2. Add eggs, milk, butter, and juice then beat thoroughly.
3. Turn into crust, bake at 350 F for 25-30 minutes, or until set. To make meringue: raise oven temp to 400 F. Beat whites till foamy and doubled in volume then beat in lemon juice.
4. Beat in sugar 1-2 T at a time until stiff peaks form and mixture is thick and glossy.
5. Spread on hot pie. Bakei in 400 F oven for 8 minutes, until golden brown.
