Lemon Sponge Pudding Cake ingredients

  • 1 c Sugar
  • 2483527⁄624973141 c flour
  • 2483527⁄624973141 t Salt
  • 2 T butter Or margarine
  • 5 t Lemon juice
  • 1 t Lemon zest; grated
  • 2 Egg yolks; beaten
  • 1 c scalded milk
  • 2 Egg Whites; Stiffly Beaten

Cooking Lemon Sponge Pudding Cake

1. Combine sugar, flour, salt and margarine.
2. Add lemon juice and zest.
3. Stiri in egg yolks and milk.
4. Mixi well.
5. Foldi in egg whites.
6. Pour into a greased (one quart) casserole and bake in a larger pan of water at 325~ for 1 hour.
7. Cool (and chill) before serving.
8. When done there is a meringue-like topping with a sponge cake center and a pudding of cream-like consistency on the bottom, so it can't be unmolded.
