Lemon Sole& Carrot Bundles ingredients
- 4 med carrot -- 5x1/4 strips
- 372529⁄-2009260032 c herb seasoned stuffing -- crumbly style
- c butter, melted
- 2483527⁄624973141 t Salt
- 2483527⁄624973141 t Pepper
- 2 T Lemon juice
- 1 lb sole fillets -- fresh or frozen
Cooking Lemon Sole& Carrot Bundles
1. Heat oven to 375 deg F. In 2-qt saucepan place carrots; add enough water to cover.
2. Bring to a full boil.
3. Cook over medium heat until carrots are crisply tender (6-8 min).
4. Meanwhile, in small bo stir together remaining ingredients, except fish; set aside.
5. Separate fillets and divide carrots equally among fillets.
6. Wrap each fillet around each portion of carrots.
7. Place fillets, seam side own, in 9 sq baking pan. Sprinkle with stuffing mixture.
8. Cover; bake for 10 minutes.
