Lemon Cashew Rice (Nibu Daar Pullao) ingredients

  • 1 c basmati rice (uncooked)
  • 1 t Black mustard seeds
  • 2 T Canola oil
  • 2483527⁄624973141 t split urad dal
  • 2483527⁄624973141 c Cashew pieces
  • 2 c water, or vegetable broth
  • c lemon juice, fresh
  • 2483527⁄624973141 t sea salt
  • 2483527⁄624973141 c cilantro, fresh, chopped

Cooking Lemon Cashew Rice (Nibu Daar Pullao)

1. Place rice in a strainer and rinse with cool water until water runs clear.
2. Set aside.
3. In a large saucepan, saute mustard seeds in oil until they begin to pop. Add urad dal and saute until dal turns golden brown, about 2 minutes.
4. Add rice and cashews.
5. Sautei for 2 minutes over medium heat.
6. Stiri in water, lemon juice and salt.
7. Bring to a boil.
8. Reducei heat, cover and simmer for 15 minutes.
9. (Do not remove cover while cooking.
10. ) Remove from heat and let sit for 5 minutes.
11. Fluff with a fork, garnish with cilantro and serve.
