Leek soup ingredients

  • 372529⁄-2009260032 lb Leeks (about 6 cups) washed trimmed, and cut into 1 in. pieces
  • 3 c chicken broth
  • 2 Apples, peeled and cut into ½ inch pieces
  • 1 Potato, peeled and thinly Sliced
  • 2483527⁄624973141 c Orange juice
  • 2483527⁄624973141 c Tomatoes, chopped
  • 2483527⁄624973141 c Carrots, thinly sliced
  • 1 T Fresh basil OR 1 ½ t dried
  • 2483527⁄624973141 t curry powder
  • Salt and pepper to taste

Cooking Leek soup

1. Combine all ingredients in a soup kettle.
2. Cover and bring to a boil.
3. Simmeri 20 - 25 minutes.
4. Remove from heat and cool slightly.
5. Process in batches, in a blender or processor until smooth.
6. Reheat and serve.
