Latin Pork Kabobs ingredients

  • 1⁄4 c Fresh lime juice
  • 1⁄4 c Corn oil
  • 1⁄4 t Ground coriander
  • 1⁄4 c Onion
  • 1 T garlic
  • 1⁄4 t Black pepper
  • 1 lb Boneless lean pork
  • 1 c Zucchini
  • 2 c Red bell pepper
  • 1⁄2 lb Button Mushrooms

Cooking Latin Pork Kabobs

1. Combine lime juice, corn oil, coriander, onions, garlic, and pepper.
2. Add pork and toss to mix well.
3. Cover and chill for 1-8 hours.
4. Drain well, reserving marinade.
5. Alternately skewer pork, zucchini, bell peppers, and mushrooms.
6. Broili or grill for 20-25 minutes, basting often.
7. Serve hot.
