  • 200 g romanesco
  • 10 g Salt

  • 50 g butter, clarified
  • 1 seasoning (salt+pepper)
  • 15 g Shallots
  • 1 dl Wine, white
  • Brown stock
  • 20 g Coriander, fresh (Cilantro)
  • 120 g Butter, cooking

1. CUT THE VEGETABLES INTO DIFFERENT SHAPES ( TRIANGLES,SQUARES,etc.
2. ) USING SMALL PARISIENNE SCOOP, MAKE BALLS OF VEGETABLES BLANCH VEGETABLES IN SALTED WATER SEASON LAMB AND SAUTE IN CLARIFIED BUTTER PLACE LAMB IN OVEN FOR 5 MINUTES AT 200°C SAUTE CHOPPED SHALLOTS IN 10gr OF BUTTER DEGLAZE WITH WHITE WINE AND REDUCE TO SIRPOY CONSISTENCY ADD BROWN STOCK REDUCE TO 1DL AND STRAIN ADD 1/2 THE CHOPPED CORRIANDER AND BUTTER FLAKES HEAT VEGETABLES IN BUTTER AND ARRANGE ON PLATE LIKE A MOSAIQUE CUT LAMB INTO SLICES AND PLACE ON TOP OF VEGETABLES POUR SOME SAUCE IN MIDDLE AND GARNISH WITH A CORRIANDER LEAF.
