Joe's Ciopino ingredients

  • 3⁄4 c butter
  • 2 Onion, chopped
  • 4 stalk Celery
  • 4 Carrots, diced
  • 4 Potatoes, diced
  • 3 clv garlic
  • 1⁄2 c parsley, chopped
  • 1⁄2 c Cilantro, chopped
  • 28 oz Crushed tomatos
  • 16 oz Clam juice
  • 8 oz Tomato sauce
  • 1 1⁄2 c Dry wine
  • 2 Bay leaf
  • 1 t basil
  • 1 t Oregano
  • 1 t thyme
  • 1 t Chili powder
  • 1 t Cayenne
  • 2 cn chicken broth
  • 1 1⁄2 lb Shrimp or prawns
  • 1 1⁄2 lb scallops
  • 1 1⁄2 lb white fish, cut up
  • 18 Clams
  • 18 Mussels
  • 3 crab, cracked

Cooking Joe's Ciopino

1. In large pot saute top six ingredients 7-8 mins add next 13 ingredients, simmer 40mins add seafood and cook 7-8 mins,till clams & mussels open serve in bowls with plenty crusty bread.

This recipe is awesome. I did not have clam juice so I put in one organic can of clear barley soup and left out the potatoes and substituted two tablespoons of raspberry vinigarette instead of red wine vinegar. Thank you. We are fortunate to have great fresh sea food at Joe Patties here in Pensacola brought in everyday by the fishermen locally. I was also able to buy fresh herbs in their wonderful deli. Thank you. I have just spent a week in San Fransisco on vacation and had the dish at Scombos (I think I spelt that wrong). It was so good that is why I looked on the web to see if I could find the recipe and voila. We had the most wonderful meal this evening cooked from your recipe. (so did my neighbors and friends).
