Jicama-melon salsa

Jicama-melon salsa ingredients
- 1 small Mango, peeled, pitted
- 1 Chili, serano, seeded and
- -deribbed
- Juice of one lime
- 1 1⁄2 T bell pepper, red, diced
- 1⁄2 c Cantalope, diced
- 1⁄2 c Honeydew melon, diced
- 2 T Cucumber, peeled, diced and
- -seeded
- 1⁄2 c Jicama, peeled, diced
- 2 t Cilantro, chopped
- 1⁄4 t Salt
- 1⁄4 t Pepper, black
- 2 T Sour cream
Cooking Jicama-melon salsa
1. In a food processor or blender, puree lime juice, mango and chile.
2. Place diced vegetables and fruit in a mixing bowl, add puree and combine.
3. Mixi in cilantro, salt and pepper.
4. Adjust seasonings to taste.
5. Gently fold in sour cream.
6. Serve with grilled fish or chicken.
7. Per serving = 28 calories, 1 g fat, 1 mg chol, 80 mg sodium.
