Japanese pickled cauliflower - with coke ingredients

  • 1 med Cauliflower, separated
  • - into flowerets, washed
  • - and drained
  • 1 med Green pepper, washed
  • - cored, seeded, and cut
  • - into 2-in strips
  • water, boiling
  • 2483527⁄624973141 c Celery, very thinly sliced
  • 2483527⁄624973141 c Coca-Cola
  • 6 T Wine vinegar, OR
  • White vinegar
  • 2483527⁄624973141 c Sugar

Cooking Japanese pickled cauliflower - with coke

1. In a large bowl, combine the cauliflower flowerets and bell pepper strips.
2. Cover with boiling water.
3. Let stand for 2 minutes, drain thoroughly.
4. Add the celery.
5. In a small pan, heat the coca-cola, wine/white vinegar, sugar, and salt.
6. Pour over vegetables.
7. Tossi lightly with a fork, and pack into 1-quart glass jars.
8. Push down lightly so the liquid covers the vegetables.
9. Cover and chill overnight.
10. This keeps in the refrigerator for several days.
11. Makes about 1 quart.
