Italian potato salad ingredients

  • 1 lb New red potatoes
  • 1⁄4 c water
  • 1⁄2 T Salt
  • 1 small Red onion; thinly sliced
  • 1⁄3 c Sliced ripe olives
  • 1⁄2 c Chopped green pepper
  • 1 Tomatoes, chopped
  • 1⁄2 c Italian dressing
  • 2 T Snipped fresh parsley
  • 1 T Parmesan cheese

Cooking Italian potato salad

1. Scrub potatoes; cut crosswise into ¼ in. slices.
2. Place in 1 ½ qt. microwave safe casserole.
3. Add water and salt.
4. Cover with lid. Microwave on high for 9-10 min. or until potatoes are tender; stirring once.
5. Drain and cool.
6. Add onions, olives, green pepper, tomato, dressing and parsley.
7. Mixi lightly to coat evenly.
8. Refrigerate until chilled.
9. Stiri before serving and sprinkle with cheese.
